Tomato paste is one of the most important and valuable products that is produced by processing tomatoes and applying changes to it. Tomato paste is considered as one of the most widely used food condiments. Its production in the country, in addition to meeting domestic needs, has been able to experience the export of tomato paste in international markets. Iran is considered to be the second largest producer of tomato paste in the region, and more interestingly, the quality of Iranian tomato paste is much higher than Turkish products.
According to the United Nations Agricultural Organization (FAO), Iran’s tomato production in 2016 was equivalent to 6.4 million tons, which ranked Iran seventh in the world in terms of tomato production. Of the approximately 6.5 million tons of tomatoes produced on average in Iran, approximately 800,000 tons are produced in tomato paste, of which about 17% is in excess of the country’s consumption and is exported to other countries.

Neighboring countries, especially Iraq and Afghanistan, are the largest importers of tomato paste from Iran due to their cultural and taste affinity with Iran. The countries targeted for the export of Iranian tomato paste, ie the countries to which the most Iranian tomato paste is exported, include 7 countries: Iraq, Afghanistan, Russia, UAE, Syria, Tajikistan, and Kazakhstan. Aseptic tomato paste is for export and is not produced for domestic consumption. This type of tomato paste is produced under vacuum and stored in special bags that last up to two or three years and are produced only for export. In general, importers do not usually buy non-aseptic tomato paste.
A very important point that all exporters of tomato paste should pay special attention to is the Brix index of tomato paste for the target country. The higher the Brix index in tomato paste, the thicker the resulting tomato paste, and the higher the amount of tomato paste needed to make it, for example, to make one ton of tomato paste with Brix 20 approximately four tons of tomatoes are needed, while preparing the same amount of tomato paste with Brix 38 will require approximately seven tons of tomatoes.
